Where did the name come from?
I love Star Wars!
What better way to combine two passions ... Grilling & Chilling, and Star Wars!
Are you willing to cater?
For the right event, yes. I have interests in music, cannabis industry, private engagements and charitable events.
If you can provide me some advanced notice I would be happy to provide catering!
Do you offer any Merch such as TShirts or Hats/etc?
Yes!
Currently I offer keychain bottle openers. I will be having my own hatpins designed, since I still have contact with my overseas factories for production. That will also allow me to mass produce other swag. I will try and keep as much as possible in state and country as I can, along with self production of other merch (tumblers, lanyards, stickers, etc)

Not at the moment. My plan is to do Eugene Farmers Market.

How did you start making your spices?
Mainly through experimentation. I would look at recipes and combine multiple recipes to form my own….kinda like being a DJ. I took what I learned in mixing beats and tracks and applied it to a different medium.
Where are you from?
Eugene, Oregon
What excites you about making your creations?
That look on a customer's face of joy and excitement. I got that feeling of dropping an epic track and watching the dance floor go off, I got that feeling when presenting a custom piece of jewelry to the customer, or with their print design coming out better than expected.
Knowing I am about to knock it out of the park with my recipes, and seeing it on my customers faces when they get that first taste.
Why should I use you over Trader Joe’s or the big chains?
Support a small local business over booshy corporate shills. With that being said, I am still a capitalist and in business to make money, so if I was picked up by Trader Joes or similar to be sold out of their stores, I would not be opposed.
What are some of your personal interests?
Star Wars, Great Music, Smoking Meats, Rocks and Minerals, Aliens, Paranormal, Cooking, Creating, Artwork, Live Music, My Dogs, Gardening.
What else can we learn about you?
I am a member of the local moose lodge and I have plans to put together a couple charitable ideas....ie Feed a Firefighter, where I got and pop up at a fire station and feed them a lunch just cuz they are awesome.
Being a member of the moose lodge, I can work in events with them. I would like to do a holiday toy run of sorts. St Jude is something that means A LOT to me beingI did a lot for them while living in Memphis, TN. I am all about good publicity that is giving back in someway. I
I will shamelessly self promote in other ways, but I would prefer to have opportunities to give back silently with some of my talents.

What would I notice and expect by using some of your spices if I have never used custom spices before?
Robust originality and regional specifics in the flavors I offer!
How do you use a dry rub like yours for a good bark?
I have a preferred method that requires using a binder of your choice, mine is yellow mustard, then being generous with spreading the rub all over the meat so it is completely covered from top to bottom, then while smoking, spritsing with your choice of liquid lightly, followed by wrapping in butcher paper and setting after cook before cutting. At that point you should have a hearty, but not rough bark that will be flavourful.
What is a Fry Seasoning?
It's too generic to call it a seasoning salt. Well, it kinda is, but much with much more flavor and opportunities. It pretty much is a general all around seasoning and very versatile. It goes well with potatoes of any kind, white meats, a veritable cornucopia of vegetables and even beagle. I chose fry seasoning because you can generally deep fry anything in life, so I thought that would apply to this blend….and it is good for mixing into your fry batter.
How much should I use?
Depending on the blend and your cook. If you are smoking and looking for a dry rub instead of a wet sauce or even a nice hearty bark, then you could be using up to 3 ounces of that blend. If you are just wanting to add a little flavour, then as little or as much as you want. Same with soups, stews or boils.
Is there salt or sugar in your products?
Yes, lots. I am in no way saying my products are healthy, I am in this game for the flavour. With that being said….I do choose to use the best products available and hope to further that with more and more local sources.

Is there anything you take pride in which makes your product unique and personal?
My creative drive to break away from the minutiae. I don't need a product to stand out and be something out of left field. I prefer to offer a service and product that can stand with the competition and be a solid reliable option. I am also stubborn and determined to succeed.
Are there any little touches or little things you do?
I will add my award winning tarragon to any opportunity I get to see what new flavor profile comes of it. Plus I like a little extra garlic.

How long does it take to make 1 batch?
In general, one batch makes 10 6oz or 20 3oz
It takes 2 hours per batch.
How long does it take to produce your products when your existing stock sells out?
The timeframe based on acquiring supplies and ingredients, to production is 2 weeks.
What is your target market?
Darkside Smokehouse's target market will be consumers who enjoy smoking and grilling different meats, seafood and vegetables. This would include demographics varying from all varieties of outdoor cooking enthusiasts, to professionals in the food service industries.
